• Management Summary
• I will run all business operations for EI Patron except for the final accounting which
will be reviewed by an accounting on quarterly basis.
• Other key personnel are the day to day manager and cooks. There is not expected to
be any shortage of qualified and available staff and management from local labor
pools in each market area.
• Organizational Structure
• My brother and myself will be in charge of store operations. During the early part
of the weekday, my brother will be the ~eneral manager until I arrive around 3:00
pm. On weekends I will manage EI Patron open to close with my brothers
assistance. Other family members have agreed to help as needed to keep
weekly/monthly overhead down to insure success in the begin~ing stages of
operations. Future organizational structure may include a larger number of wait
staff and helpers as the business is grows.
