Big retail: shelf-sharing for PDOs<br />
Gdo: uno scaffale comune tra i dop<br />
Two exporters, Matteo Suriani and Lucio<br />
Duoccio, asked for panel tests of the<br />
taste and fl avour properties, as well as<br />
GobalGap certifi cation, so as to keep the<br />
road to international markets open. The<br />
big retail chains were more than happy<br />
to comply. As Claudio Gamberini of the<br />
Conad chain said, «Working with an<br />
organised supply chain is an advantage<br />
for us in terms of costs and scheduling<br />
purchases. Ours is a supermarket chain<br />
that has outlets even in small towns<br />
and areas and we devised the “Sapori e<br />
dintorni” (‘Flavours and friends’) brand<br />
to meet the demand of consumers<br />
looking for high-end items. We’d be<br />
happy to buy Polesano Garlic for this<br />
label, although we have to keep in mind<br />
that garlic is already a niche item for us<br />
and a Pdo garlic is the niche of a niche.<br />
We already handle Voghiera garlic and<br />
in the international marketplace too, commented<br />
Claudio Salvan, President of <strong>Il</strong> Polesine Coop, since<br />
it was the foundation for securing the EU Pdo seal.<br />
«China’s always been the world’s leading garlic producer<br />
– noted Salvan. – We can’t, nor shouldn’t even<br />
try to compete with its 13 thousand-ton crop, which<br />
is whiter and bigger than our garlic but hasn’t got the<br />
fl avour and only keeps well thanks to the invention of<br />
cold stores. Nor can we compete in price with South<br />
Korea and Egypt since they have very low overhead<br />
and other food safety standards. What we do have<br />
is Pdo White Polesano, a garlic with big fl avour,<br />
great fragrance and extra-long shelf-life. Our job is<br />
to highlight these valuable properties so as to claim<br />
our share of the market. The task at hand is thus to<br />
keep improving our quality level and promote our<br />
product identity».<br />

nonché le certifi cazioni di prodotto<br />
(Global gap) per non precludere la strada<br />
internazionale. Grande disponibilità da<br />
parte della gdo, che per bocca di Claudio<br />
Gamberini di Conad, ha rilanciato: «Avere<br />
a che fare con una fi liera organizzata per<br />
noi è un vantaggio in termini di costi e di<br />
programmazione degli acquisti. Siamo<br />
una catena che vive anche nei paesini e<br />
nei territori e abbiamo creato il marchio<br />
“Sapori e dintorni” per andare incontro ai<br />
consumatori che cercano l’alta gamma.<br />
Inseriremo senza problemi l’Aglio polesano<br />
sotto questo marchio, ma teniamo<br />
conto che l’aglio per noi è già una nicchia<br />
e un aglio dop è la nicchia della nicchia.<br />
Abbiamo già l’aglio di Voghiera e non<br />
possiamo tenerne tanti tipi distinti, per<br />
cui sarebbe necessario fare un progetto<br />
comune con i rispettivi consorzi per entrare<br />
sugli scaffali assieme, nel segmento<br />
aglio. In genere nell’ortofrutta vale l’equazione<br />
prezzo basso uguale qualità bassa.<br />
Noi, con le nostre operazioni su prodotti<br />
specifi ci, ad esempio le arance rosse<br />
di Sicilia, vendute ad 1,30 €, abbiamo<br />
dimostrato che si può fare qualità alta al<br />
giusto prezzo». Be.Te.<br />
è la carta vincente sul mercato anche internazionale,<br />
come ha precisato Claudio Salvan, presidente della<br />
coop <strong>Il</strong> Polesine, grazia alla quale è partito l’iter per il<br />
riconoscimento del marchio dop. «La Cina è il primo<br />
produttore mondiale di aglio da sempre – ha ricordato<br />
Salvan –. Noi non possiamo e non dobbiamo competere<br />
con le sue 13mila t di prodotto, che è più bianco e<br />
più grosso del nostro, ma non ha sapore e si conserva<br />
solo grazie all’invenzione delle celle frigo. E neppure<br />
possiamo competere sul prezzo con Corea del Sud<br />
ed Egitto perché hanno bassissimi costi di produzione<br />
e altri standard di sicurezza alimentare. Però abbiamo<br />
l’Aglio bianco polesano dop che ha grande sapore,<br />
molto aroma e ultra conservabilità: valorizzando in<br />
modo adeguato queste caratteristiche potremo trovare<br />
la nostra collocazione sul mercato. Quindi, il nostro<br />
compito è elevare sempre di più il livello di qualità e<br />
mantenere l’identità del nostro prodotto».<br />
