Food services for athletes, officials, and<br />
media personnel were provided in a hygienic<br />
and comfortable environment at the Olympic<br />
Village and other competition and non-competition<br />
venues. Along with providing a nutritious<br />
diet, menus reflected the food and religious customs<br />
of participating countries and regions, and<br />
introduced the foods of Japan and Nagano. In<br />

total, 628,000 meals were provided and earned<br />
high praise in particular from the athletes for<br />
both quantity and quality.<br />
Food service was provided at 72 cafeterias<br />
and restaurants at 24 facilities, among them the<br />
Olympic Village, Olympic Family lounges,<br />
IBC, MPC, Media Villages, media cafés, the<br />
Sponsor Hospitality Village, and the Sponsor<br />
hospitality tents.<br />
Operations<br />
Bids for the contract to oversee catering services<br />
were solicited from four companies in<br />
June 1996. Emphasis was placed on choosing a<br />
company with a proven track record in providing<br />
food services for international sporting<br />
events, as well as with the relevant managerial<br />
experience to run all aspects of food services<br />
operations, including subcontracting companies,<br />
and providing a high standard of efficient<br />
service. Furthermore, expert advice regarding<br />
