on part-time contracts and culinary<br />

school students to make a total of 1,442 people<br />

in food services.<br />

Menu<br />

The following considerations were given<br />

priority in developing menus:<br />

• Olympic Village Restaurant<br />

- Respecting food and religious customs of<br />

the participating countries and regions<br />

- Providing a wide range of menus with a variety<br />

of food items<br />

- Providing the nutrition necessary for athletes<br />

- Including Japanese foods to introduce food<br />

customs of the host country<br />

Typically Japanese foods such as sushi, tempura,<br />

and sukiyaki were offered on the menu,<br />

and Nagano specialities such as apples and<br />

mushrooms were used as ingredients in many<br />

items. Stands offering local delicacies such as<br />

soba noodles and oyaki buns were also set up.<br />

All these foods were a hit with village residents,<br />

with udon noodles proving particularly popular.<br />

Athletes and officials whose schedules took<br />

them away from the village at meal times, were<br />

provided with pasta lunches packed in heat-generating<br />

boxes.<br />

The Chefs de Mission gave high marks for<br />

food services at the Olympic Village, and suggested<br />

the restaurant serve as a model for future<br />

Games.<br />

• Cafeterias at the IBC, MPC, and Media<br />

Villages<br />

In principle, the menu was the same as that<br />

at the Olympic Village, and comprised 65%<br />

western cuisine, 25% Japanese cuisine, and<br />

10% Chinese cuisine.<br />

• IBC, MPC, Media Village Restaurants<br />

The menu consisted primarily of western<br />

foods made from local Nagano ingredients as<br />

well as ingredients from other regions of<br />

Japan. The type of food served in restaurants<br />

near these facilities was also taken into consideration.<br />

• Media Cafés<br />

Depending on the size of the facility, food<br />

service was provided in either convenience<br />

store style, or snack bar style.<br />

Sponsors<br />

Sponsors also assisted in providing food services<br />

by setting up their own outlets.<br />

McDonald’s set up food service counters at the<br />

Olympic Village, IBC, and MPC, while Kirin<br />

Beer set up a bar in the IBC.
