2.3.4 Colour parameters<br />

Colour coordinates were measured from the reflection spectrum in a<br />

spectrocolorimeter CM-3600 d (MINOLTA Co; Osaka, Japan). A 20 mm<br />

depth cell was used. CIE L * a * b coordinates were obtained using illuminant<br />

D65/10º observer. Lightness (L * ), chrome (C * ab) and hue (h * ab) of the<br />

different samples as well as colour difference (E) (equations 3 to 5) with<br />

respect to the non-fermented sample were obtained.<br />

2.3.5 Confocal laser scanning microscopy (CLSM)<br />

A Nikon confocal microscope C1 unit, which was fitted on a Nikon<br />

Eclipse E800 microscope (Nikon, Tokyo, Japan), was used. An Ar laser line<br />

(488 nm) was employed as light source to excite fluorescent dyes<br />

Rhodamine B and Nile Red. Rhodamine B (Fluka, Sigma-Aldrich, Missouri,
