3. VEGETABLE MILK PROCESSING<br />

Industrial vegetable milk processing is based on five main steps:<br />

grinding, water extraction, filtration, homogenisation and pathogen removal<br />

treatment. Nevertheless, depending on the raw material and the desired final<br />

product characteristics, the process slightly differs. Thus, the processing is<br />

subsequently explained separately, taking into account the different groups of<br />

these abovementioned milks commented.<br />

3.1 Cereal milk processing<br />

A typical flow diagram of cereal milk processing is shown in Figure 1.<br />

Before going through the extraction procedure, cereals are conditioned: this<br />

mostly refers to husking, washing and grain classification. Pre-conditioning is<br />

a requisite for Quinoa grain due to its saponins contents (toxic in high<br />

amounts and imparts a bitter taste). Mechanical abrasion and/or washing are<br />

sufficient to remove this unwanted compound (Brady et al., 2007).
