Horiatiki Salata<br />

Ingredients: Tomatoes,<br />

cucumber, red onion,<br />

Kalamata olives,<br />

feta cheese, olive<br />

oil, red wine<br />

vinegar, minced<br />

garlic, oregano,<br />

salt and pepper<br />

Horiatiki salata is<br />

your classic big,<br />

fat Greek salad.<br />

‘Horiatiki’ means<br />

village-style and this<br />

fresh, healthy salad is<br />

found in various forms<br />

throughout the eastern<br />

Mediterranean. For instance, the<br />

addition of sumac (deep red berries native to the Middle East,<br />

which are dried and ground into coarse powder) and toasted<br />

pita to Horiatiki Salata will become known as fattoush in the<br />

Arab countries. Either way, this salad is versatile enough to<br />

suit everyone’s palate. You can choose to add in a chopped<br />

green or red bell pepper or use lemon juice as a substitute<br />

for the red wine vinegar.<br />

Gado Gado<br />

Ingredients: Mung beans, carrots, green beans, potatoes,<br />

Romaine lettuce, cucumbers, tomatoes,<br />

hard boiled eggs, shrimp<br />

crackers, peanut sauce<br />

You know what Gado Gado<br />

really means? Its literal<br />

translation is “mix-mix”<br />

salad in Indonesia, Gado<br />

Gado comes in a number<br />

of regional variations. The<br />

vegetables listed in the above<br />

ingredients are the commonly<br />

used ones; there are some<br />

variations that have<br />

additions of cauliflower,<br />

snow peas, spinach and<br />

other greens as well as<br />

fried tofu; just whatever<br />

you want in it really.<br />

Panzanella<br />

Ingredients: Good quality bread with crust removed,<br />

tomatoes, red onion, fresh basil, olive oil, red wine vinegar,<br />

garlic, salt and pepper<br />

Panzanella offers a tangy, invigorating taste that can remind<br />

you of summer in Tuscany. This classic summer salad originates<br />

from Tuscany and its neighbouring regions in central Italy.<br />

Now, the Tuscans are notable for their ingenious ways of using<br />

up old bread. And, this salad is a perfect example of it. You<br />

can choose to add in drained canned tuna, diced cucumber,<br />

chopped Romaine lettuce, hard boiled eggs, capers and<br />

chopped anchovies for a different taste.<br />

Rojak<br />

Ingredients: Fried dough<br />

fritters, bean curds, prawn<br />

fritters, hard boiled eggs, bean<br />

sprouts, cuttlefish, cucumber,<br />

pineapple, bean sprouts, tau pok (puffy, deepfried<br />

tofu), raw mangoes, you tiao (cut-up Chinese style<br />

fritters), peanut sauce<br />

Rojak is a popular traditional fruits and<br />

vegetable salad in Malaysia. The term<br />

“Rojak” means mixture in Malay<br />

and in a way, it also reflects<br />

the different culture and<br />

people who live in peace<br />
