FLAVOURS OF THE SEA
Il pescato dell’Adriatico è uno dei più famosi in Italia. Dal mosciolo allo stoccafisso,
passando per i sapori più tenui di canocchie e merluzzo, potrete scegliere
il gusto che preferite. Una tradizione di sapori che da anni porta in tavola
una regione famosa per la cucina di mare. Per antipasto da non perdere il
misto di caldi e freddi, una rassegna dei sapori migliori. Come primo da
assaggiare la carbonara di mare, un gusto corposo che associa i sapori
della terra con quelli di mare. Per secondo immancabile una fritturina
mista dell’Adriatico o un’orata al cartoccio.
The fish catch of the Adriatic is one of the most famous in Italy. From the
Mediterranean mussel to stockfish, onto the more subtle flavours of the mantis shrimp
and cod, you can choose whichever taste you prefer. A tradition of flavours that
for years has provided a culinary experience of a region famous for its seafood.
As an appetiser, don’t miss the mixture of hot and cold starters, samples of the best
seafood flavours. One first course you have to try is the “carbonara al mare”,
a rich-tasting dish that combines flavours of the land with those of the sea.
For a second course, you can’t miss the mixed fried seafood of the
Adriatic or sea bream baked in foil.

MOSCIOLO
Con il nome “Mosciolo” si intende un
tipo di cozza pescato nella zona di Portonovo
di Ancona, nel tratto di mare che
va da Pietralacroce ai Sassi Neri di Sirolo.
Il mosciolo è un prodotto tipico estivo.
Molti i modi di assaporarlo, da non
perdere gli spaghetti con i moscioli, i
moscioli alla marinara e sopratutto i moscioli
arrosto.
The name “Mosciolo” indicates a type of
mussel caught around the Portonovo area
of Ancona, in the stretch of sea that goes
from Pietralacroce to the Sassi Neri of Sirolo.
The mosciolo is a typical summer product.
There are many ways to taste them: they’re
a must-have with spaghetti, alla marinara
(with garlic and tomato sauce) and above
all, roasted.
Grazie al PRESIDIO SLOW FOOD, è sempre
controllato per garantirne purezza
e qualità. Ogni estate un’intera festa lo
celebra, il nome? “Mosciolando”, ovvio!

LI SARDONCÌ A SCOTTADETO, scritto
così come viene tipicamente pronunciato
nel dialetto marchigiano, rappresentano
una delle ricette più tipiche e
gustose della Riviera.
LI SARDONCÌ A SCOTTADETO, (anchovies
cooked over charcoal) written as it is typically
pronounced in the dialect of the Marche,
is one of the most typical and tasty
recipes of the Riviera.
Una ricetta nata inizialmente come povera,
rappresenta oggi uno dei piatti più
caratteristici da gustare solitamente in
estate, che sia per cena o aperitivo in
riva al mare. PER TRADIZIONE SI DEVO-
NO MANGIARE CON LE MANI E ANCO-
RA BOLLENTI, da qui appunto il nome.
Originally created as a poor man’s recipe, it
is today one of the most traditional dishes
to be enjoyed in summer, whether for dinner
or with an aperitif on the seafront. TRA-
DITIONALLY, THEY MUST BE EATEN WITH
YOUR HANDS WHILE STILL VERY HOT, hence
the name “scottadito” (finger-burning).

STOCCO ALL’ANCONITANA:
Uno dei piatti della tradizione culinaria di
Ancona è lo stocco all’anconitana, radicato
nella tradizione cittadina e a cui è
dedicata una festa dall’evocativo nome
di Stoccafissando.
One of the dishes of Ancona’s culinary traditions
is Stocco all’anconitana, which is rooted
in the town’s heritage and dedicated
to a festival with the suggestive name Stoccafissando.
Questo piatto di pesce è unico nel suo
genere; ADAGIATO SU UN LETTO DI
ODORI, VERDURE, PATATE, così si insaporisce.
This dish is quite unique: the stockfish is placed
on a bed of aromas, vegetables and
potatoes from which it soaks up the flavour.
La tradizione del brodetto viene da
una lunga storia, quella dei borghi di
pescatori della Riviera del Conero.
The tradition of the brodetto (a type of
soup) has a long history and comes from
the fishing villages of the Riviera del Conero.
Nove diverse qualità di pesce condite
con poco olio. Molte le rivisitazioni oggi
sparse tra i comuni della costa.
The original recipe calls for at least nine different
varieties of fish, seasoned with little
oil. It now has many variations that are spread
along the coastal towns.
