FLAVOURS OF THE LAND
Le campagne della Riviera offrono una ricca scelta di prodotti tipici
assicurandovi un’esperienza culinaria molto ampia. Ogni tagliere Marchigiano
che si rispetti spiccherà per il suo Ciauscolo, morbido salume dell’eccellenza
contadina conosciuto per come si presti ad essere spalmato su crostini e
bruschette o per i suoi formaggi locali come il pecorino. Passando ai primi di
carne non si possono non assaggiare i vincisgrassi o i frascarelli
(di densità simile alla polenta ottenuta da riso e farina servita con sugo e
formaggio) per passare poi alle carni come il coniglio cotto in porchetta con
finocchio o il potacchio, preparazione tipica marchigina utilizzata per cucinare
diversi tipi di carne, dal coniglio, al pollo o agnello.
The Riviera’s farmland offers a rich choice of typical products
providing you with a vast culinary experience. On each authentic platter of the Marche
region you will find its “Ciauscolo”, a soft moist sausage of rustic excellence which can
be spread on croutons and bruschette or some of its local cheeses such as pecorino.
Going on to the first meat courses you can’t miss a taste of the “vincisgrassi” or
“frascarelli” (consistency similar to polenta made from rice and flour served with a
sauce and cheese) to then continue with meat, such as rabbit cooked “in porchetta”
with fennel or “potacchio”, a typical preparation of the Marche used to cook
different types of meat like rabbit, chicken or lamb.

VINCISGRASSI
I vincisgrassi sono il piatto domenicale
tipico presente sulle tavolate di molte
famiglie anche nei giorni di festa. Le sue
origini vengono dal passato: si dice che
nel 1799 il generale Windisch Graet dopo
aver vinto la battaglia e liberato Ancona
dall’assedio delle truppe napoleoniche,
assaggiò questo piatto cucinatogli
da una cuoca anconetana rimanendone
fortemente colpito. I Vincisgrassi, oltre
a essere fatti rigorosamente con pasta
tirata a mano, sono conditi con diversi
tagli di carne e uno strato di besciamella,
che li contraddistingue da tutte le
altre comuni ricette di lasagne.
Vincisgrassi is the typical Sunday dish on the
tables of many families as well as on festive
occasions. Its origins date back to the
past: it is said that in 1799, after winning the
battle and freeing Ancona from the siege
of the Napoleonic troops, General Windisch
Graet tasted this dish cooked for him by a
lady chef of Ancona and became greatly
impressed. Besides being strictly prepared
with hand-made pasta, the Vincisgrassi are
seasoned with different cuts of meat and a
layer of bechamel sauce, distinguishing this
dish from all other classical lasagna recipes.
Ciambella
di mosto
CIAMBELLA DI MOSTO
Nella Riviera del Conero in autunno,
subito dopo la vendemmia, è tempo di
mosto, il dolcissimo succo che si ricava
dall’uva appena raccolta e pigiata.
Questo nettare prelibato è il prezioso
ingrediente non solo del buon vino, ma
anche di una serie di dolci tipici delle
terre marchigiane. Tra questi spiccano le
ciambelle di mosto: dolci genuini e nutrienti,
a base di latte e farina, resi ancora
più gustosi e saporiti da semi di anice
freschi. Un dolce dall’odore inebriante
che si è tramandato sin dalle antiche
usanze contadine di famiglia in famiglia
e più tipiche e gustose della Riviera.
On the Conero Riviera in autumn, just after
the grape harvest, it is the perfect time for
grape must, the sweet juice that comes from

find the “ciambelle di mosto”, or must doughnuts:

family to family and is the most typical and
tasty of the Riviera.
La crescia
CRESCIA
Tipica del borgo medievale di Offagna,
è una specialità culinaria davvero gustosa,
una specie di piadina sottilissima
preparata con farina, lardo, strutto, olio
di oliva e poi cotta sulla brace. La crescia
si accompagna molto bene con affettati,
carne alla brace e con le nostrane “foie
de campo” (miscuglio di erbe raccolte
nelle campagne circostanti). Se per salvaguardarne
la qualità è nata addirittura
“L’accademia della Crescia”, un motivo
ci sarà pure!
Typical of the medieval village of Offagna,
this is a delicious culinary speciality: it’s a
type of thin flat bread prepared with flour,
lard, pork fat and olive oil and then cooked
over charcoal. Crescia is perfect accompanied
by cured meats, grilled meats and our
“foie de campo” (a mixture of herbs gathered
from the surrounding countryside). If the
“Crescia Academy” was created to preserve
its quality, there must be a reason for it!
La pizza
con i grasselli
PIZZA WITH “GRASSELLI”
Una specialità tipica marchigiana è la
pizza con i grasselli, solitamente cucinata
nel periodo invernale. L’impasto, simile
a quello di una pizza o crescia viene
mischiato con i grasselli, piccolissimi
pezzi di carne, residui della lavorazione
del maiale, che vengono bolliti, sgrassati
ed infine insaporiti, facendoli rosolare
e aggiungendo pepe e sale. Con questi
“ciccioli o grasselli,” come vengono
chiamati secondo la zona di provenienza,
e del dialetto, si ottiene una pizza
croccante, profumata.
A typical speciality of the Marche is pizza
with “grasselli”, usually cooked in the winter.
The dough, similar to that of a pizza or “crescia”,
is mixed with “grasselli”, which are tiny
pieces of meat, the remains of pork processing,
which are boiled, skimmed of the fat
and finally flavoured by roasting them and
adding salt and pepper. With these “ciccioli
or grasselli,” as they are called according to
the area of origin, and the local dialect, you
get a crisp, fragrant pizza.
