contribute to public health?<br />

Low milk prices forces dairy farmers to increase the value<br />

of their primary product for financial survival. This may well<br />

be done by using the right dairy breed.<br />

Introduction<br />

The fat component of milk has for many years been the<br />

proverbial black sheep of the food industry. Generally it<br />

is recommended that the fat content of the human diet<br />

should be reduced for protection against cardiovascular<br />

diseases and some forms of cancer. This has resulted<br />

in the popularity of low fat milk, cheese and joghurt.<br />

However, the total amount of fat in milk is made up<br />

by a large number of saturated and unsaturated fatty<br />

acids. The difference between these two types of fat is<br />

dependant on the presence or absence of double bonds<br />

at specific sites on the carbon chain making up the<br />

fatty acid. Unsaturated faty acids are in a liquid form at<br />

room temperature and are considered “healthy fats”. It<br />

seems that the intake of saturated fatty acids is linked to<br />

cardiovascular diseases (see enclodes side bar).<br />

Some researchers have found that lifestyle changes,<br />

as well as changes in diet, could contribute largely to<br />

the improvement of the general health of the public. By<br />

changing the type of fat in the diet as well as ingesting so-<br />

called “healthy” foods, a considerable contribution could<br />

be made to the health of people specifically with regards<br />

to cardiovascular diseases and some forms of cancers.<br />

The fat in milk has recently acquired an improved value<br />

as new research has shown that some fatty acids<br />

found in milk have a positive effect on the health status<br />

of people. It is especially fatty acids such as omega-3<br />

and conjugated linoleic acid (CLA) seeming to have<br />

anticancerigenic, antitherogenic, antidiabetic and<br />

antidipogenic effects. Food sources from animals are the<br />

richest sources of CLA for humans, with milk having a<br />

higher concentration than meat. The amount of CLA in<br />

cows’ milk is affected mostly by their diet. Healthy fatty<br />

acids increase in the milk of cows when they consume<br />

green pastures and when they are fed feeds such<br />

as whole cottonseed. A number of overseas studies<br />

have shown that the CLA content of Holstein and Jersy<br />

milk differ very little. A local study by the University of<br />

Stellenbosch has found similar results. However, in that<br />

study, the CLA content of the milk of cows consuming<br />

pastures was almost double that of cows on total mixed<br />

rations, i.e. 10.5 vs. 5.4 mg/gram fatty acid.<br />

Recently, it was also found that some dairy breeds<br />

produce milk with a higher CLA content than Holsteins.<br />

It is specifically the Fleckvieh breed, a Simmental derived<br />

dual-purpose breed, from Germany, that produce milk<br />

with higher CLA levels. This breed is found in large<br />

numbers in Germany and some Eastern European<br />

countries and is, according to some sources, the second<br />

largest dairy type breed in the world. In Germany it was<br />

found that the CLA content of the milk of Fleckvieh cows<br />

is higher during the summer months when cows are<br />

on pastures than during the winter when cows are fed<br />

in stalls. Another study in Canada showed that the CLA<br />

levels in the milk of Fleckvieh x Holstein cows were higher<br />

than that of Holstein milk receiving the same diet.<br />

A number of dairy farmers in the Western Cape have started<br />

doing crossbreeding in their dairy herds using Fleckvieh
