DOES PASTA MAKES FAT?<br />
<strong>Makarna</strong>, yapısında bulunan kоmpleks<br />
karbonhidratların hızlı bir şekilde<br />
parçalanıp enerjiye dönüşebilmesi,<br />
mineral ve vitamin açısından oldukça<br />
zengin olması nedeniyle önemli bir<br />
besin, enerji kaynağıdır. A, B1, B2,<br />
vitaminleri, demir, kalsiyum, fosfor,<br />
potasyum ve protein <strong>iç</strong>erir. Yağ ve<br />
sodyum oranı düşüktür, kolesterol<br />
<strong>iç</strong>ermemektedir.<br />
Bu faydalarına karşın, tüketiminin<br />
istenilen seviyede olmadığını<br />
görüyoruz. Bunun belli başlı sebepleri<br />
vardır. Örneğin; Türkiye’de olduğu gibi<br />
pek çok ülkede makarna, bulgur veya<br />
pirinç pilavı gibi ana yemek olarak<br />
kabul edilmemektedir.<br />
Ancak bundan da önemlisi,<br />
makarnanın besleyici değerinin<br />
bugüne kadar tüketiciye yеtеrincе<br />
anlatılamamış olmasıdır. Biraz da<br />
bu nedenle tüketiciler arasında<br />
“makarna şişmanlatır” inancı<br />
yaygındır. Oysa sağlıklı yetişkin bir<br />
birey, günlük enerjisinin %55-60’nı<br />
karbonhidratlardan karşılamalıdır.<br />
Karbonhidratlar; basit şekerler ve<br />
kompleks karbonhidratlar olmak üzere<br />
iki grupta toplanmaktadır. Pancar,<br />
şeker kamışı veya mısır nişastasından<br />
elde edilebilen saf şekerlerin ve<br />
meyvenin yapısında doğal olarak<br />
bulunan basit şekerlerin tüketiminin,<br />
gün <strong>iç</strong>erisinde toplam karbonhidrat<br />
tüketiminin %10’unu hatta son<br />
zamanlarda %5’ini geçmemesi<br />
Dünya Sağlık Örgütü tarafından<br />
önerilmektedir. Buna karşın bireylerin<br />
geri kalan karbonhidrat tüketimlerinin<br />
kompleks karbonhidratlardan<br />
karşılanması gerektiği belirtilmektedir<br />
ki, bu açıdan makarna, beslenmede<br />
önemli yer tutan besinlerden birisidir;<br />
üstelikte ucuz bir kaynaktır.<br />
<strong>Makarna</strong>nın yağ oranı çok düşüktür.<br />

body weight, but<br />
the amount of<br />
sauces and fats<br />
used at cooking.<br />
Since it is rich in mineral and vitamines and<br />
of complex carbonhydrates built-in which<br />
can easily turn into energy by degrading<br />
rapidly, pasta is an outstanding source of<br />
nutrition and energy. It consists of A, B1 and<br />
B2 vitamines, iron, calcium, phosphorus and<br />
proteins. It doesn’t contain cholesterol but<br />
lower rates of fat and sodium.<br />
In spite of these beneficiaries, we shall<br />
observe that pasta consumption is not at<br />
a desired level and it has certain reasons.<br />
For instance, like bulghur pilaf and rice<br />
pilaf, pasta is also not accepted as the main<br />
meal neither in Turkey nor in many other<br />
countries.<br />
Carbohydrates are grouped in two as basic<br />
sugar and complex carbohydrates. It is<br />
recommended by World Health Organization<br />
that the consumption of the pure sugar<br />
made from beet, sugar cane or cornstarch<br />
and the basic sugar naturally found in the<br />
fruits should not exceed 10% of the total<br />
daily carbohydrates consumption, even 5%<br />
recently. Conversely, it is mentioned that<br />
the remaining carbohydrates consumption<br />
of the individuals should be met as complex<br />
carbohydrates, and in this respect being an<br />
important food within nutrition, pasta also is<br />
a cheaper source.<br />
The fat ratio of pasta is very low. It is both<br />
very filling and includes all the required<br />
vitamins and minerals needed by the body.<br />
Also being an important source of protein,<br />
it includes most of the amino acids that can<br />
not be produced by the body and hence, to<br />
be received by all means via the food. When<br />
mixed/consumed with meat, chicken, cheese<br />
or other diaries or beans, the protein amount<br />
is even increased and it becomes a premier<br />
meal.<br />
Now, let’s come to the main<br />
question: “Does pasta makes fat?”<br />
In prevention of obesity and metabolic<br />
diseases, we always emphasize the<br />
importance of enough and balanced<br />
nutrition. In this sense, not only<br />
Mediterranean Diet, which is one of the<br />
well-known nutrition diets, but also cereals<br />
and pasta have a significant place. When we<br />
consider Mediterranean countries while this<br />
type of nutrition can be frequently viewed,<br />
