MAKARNA ŞİŞMANLATIR MI?<br />
<strong>iç</strong>in gerekli tüm vitamin ve<br />
mineralleri <strong>iç</strong>ermektedir. Aynı<br />
zamanda önemli bir protein<br />
kaynağı olup vücut tarafından<br />
üretilmeyen ancak yiyeceklerle<br />
mutlaka alınması gereken<br />
aminoasitlerden çoğunu yapısında<br />
bulundurmaktadır. Et, tavuk,<br />
peynir veya diğer süt ürünleri<br />
veya fasulyeyle karıştırıldığında/<br />
birlikte tüketildiğinde protein<br />
değeri daha da artmakta ve tüm<br />
esansiyel aminoasitleri <strong>iç</strong>eren<br />
birinci kap/temel bir yemek haline<br />
getirilmektedir.<br />
Şimdi asıl soruya gelelim;<br />
‘makarna şişmanlatır mı?’<br />
Obezite ve metabolik hastalıkların<br />
önlenmesinde yeterli ve dengeli<br />
beslenmenin önemini her zaman<br />
vurguluyoruz. Bu anlamda en iyi<br />
bilinen beslenme modellerinden<br />
biri olan Akdeniz diyetinde,<br />
tahıl grubu ve makarna önemli<br />
bir yere sahiptir. Bu beslenme<br />
şeklinin sıklıkla gözlendiği<br />
Akdeniz ülkelerine bakıldığında<br />
da özellikle bulgur ve makarnanın<br />
yüksek oranda tüketildiğini<br />
görmekteyiz. Bu besinlerin glisemik<br />
indekslerinin düşük olması, kan<br />
şekeri ve insülin düzeyini olumlu<br />
yönde etkilemektedir. Ayrıca bu<br />
ürünler mide boşalma hızını da<br />
yavaşlattıklarından bir yanda<br />
kan şekeri düzeyini olumlu yönde<br />
etkilerken, diğer yandan besin<br />
alımını azaltarak obezite riskini<br />
düşürmektedir. Bu veriler ışığında,<br />
uygun ve yeterli miktarda makarna<br />
tüketiminin şişmanlıkla ilintili<br />
olmadığını söyleyebiliriz.<br />
Zayıflama programlarında,<br />
yiyeceklerin yağ oranı ve<br />
glisemik indeksleri büyük önem<br />
taşımaktadır. <strong>Makarna</strong>da hem yağ<br />
<strong>iç</strong>eriği çok azdır hem de glisemik<br />

and glycemic index of food are of great<br />
importance. In pasta, both the fat<br />
content and glycemic level is lower.<br />
Since complex carbonhydrates mix<br />
slowly with blood, they evoke insulin<br />
release more balanced and causes<br />
feeling of satiety for a much longer<br />
time. The energy coming from this type<br />
of carbonhydrates are stored in the<br />
muscles and mixes with blood when<br />
needed.<br />
Fatty and creamy sauces and other<br />
foods are those which are included while<br />
cooking pasta and they cause increases<br />
in energy density of pasta. Therefore,<br />
to be of the opinion that “pasta makes<br />
fat” is a wrong decision. The amount of<br />
consumed pasta, whereas fat content<br />
the sauces used in cooking pasta<br />
process have influences on body weight<br />
increases.<br />
Pasta must not be assumed as a food<br />
to be kept away from. Even in the diets<br />
adopted for losing pounds, diabetes,<br />
cardiovascular disorders, pasta may be<br />
consumed at appropriate amounts and<br />
frequency.<br />
At the same time, pasta consumption<br />
is a healthy choice in order to fulfill the<br />
additional energy for the individuals<br />
needing a high level of energy such as<br />
workers with higher physical activities<br />
and sportsmen. Using fats or proteins<br />
in order to secure the additional<br />
energy for the body is never a better<br />
alternative. For the individuals working<br />
at heavy physical activities, sportsmen<br />
