developed. One was a soup mix made by the Boltz Mfg. Co.<br />

(Los Angeles). The other was made by the Gentry Company<br />

<strong>of</strong> Los Angeles. Clinton tried both products in his<br />

restaurants–chose the Gentry product because it was more<br />

• Summary: T<strong>of</strong>u <strong>and</strong> tempeh have little flatus activity, i.e.<br />

they cause little gastrointestinal gas.<br />

The two basic types <strong>of</strong> bean sprouts, <strong>soy</strong>bean <strong>and</strong> mung<br />

bean, gave almost identical reactions. Both cause slightly<br />

more breath hydrogen, total flatus <strong>and</strong> bacterial gases in the<br />

flatus than the baseline treatment but somewhat less than the<br />

100-gram doses <strong>of</strong> beans.<br />

MPF [Multi-purpose food] is a high-protein food<br />

(containing 50% protein) with toasted <strong>soy</strong> grits as the only<br />

protein source. The size <strong>of</strong> the test dose (136 gm) contained<br />

the same amount <strong>of</strong> protein as 20 gm <strong>of</strong> <strong>soy</strong>beans. This<br />

amount <strong>of</strong> MPF contains only one-third the carbohydrate<br />

content found in <strong>soy</strong>beans (21 vs. 67 gm) a very little fat<br />

(1.4 gm). The gas <strong>for</strong>ming property <strong>of</strong> the <strong>soy</strong>bean was<br />

found to be “retained in proportion to the amount <strong>of</strong><br />

carbohydrate present <strong>and</strong> was otherwise unchanged by the<br />

One panel states that Bangladesh has recently declared<br />

its independence <strong>from</strong> Pakistan, <strong>and</strong> that food <strong>for</strong> large<br />

numbers <strong>of</strong> refugees is urgently needed. This leaflet can be<br />

dated approximately <strong>from</strong> this fact, since Bangladesh<br />

declared its independence on 26 March 1971. The<br />

Bangladesh Liberation War lasted nine months, ending in<br />

<strong>soy</strong>beans). The Meals <strong>for</strong> Millions one-two punch<br />

(Americans helping other nations to help themselves. “Since<br />

its inception in 1946, the foundation has shipped 15 million<br />

pounds <strong>of</strong> high-protein foodstuffs to 129 countries <strong>and</strong><br />

territories”). And where it strikes at hunger (The Foundation<br />

has helped the farmers <strong>of</strong> Duale, Ecuador, set up<br />

cooperatives to grow rice <strong>and</strong> <strong>soy</strong>beans). Meals <strong>for</strong> Millions<br />

operates at home <strong>and</strong> abroad (“Korea: In 1969 a new Multi-<br />

Purpose Food plant was opened in Chun Chon under the<br />

management <strong>of</strong> Yong Soo Pyun, a <strong>for</strong>mer student <strong>of</strong> the<br />

Meals <strong>for</strong> Millions Training Program. The plant is capable<br />

<strong>of</strong> producing tons <strong>of</strong> protein-rich MPF a day <strong>and</strong> is operated<br />

by the people <strong>of</strong> the province.” A photo shows the outside<br />

<strong>of</strong> the plant). The far-reaching effects <strong>of</strong> self-help (“Selfhelp<br />

programs are the only permanent solutions to the<br />

world’s critical hunger problem”).<br />
