personnel <strong>and</strong> the student participants. I left with the feeling<br />

• Summary: “According to in<strong>for</strong>mation obtained <strong>from</strong><br />
Meals <strong>for</strong> Millions workers, who were doing field work in<br />
Ecuador, a group <strong>of</strong> Ecuadoreans living in the Sierras have<br />
adopted home-grown <strong>soy</strong>beans as a daily food prepared in<br />
their home. The food product called Matchaka consists <strong>of</strong><br />
whole <strong>soy</strong>beans that are toasted then ground in h<strong>and</strong> c<strong>of</strong>fee<br />
mills. Coarse sugar is added <strong>and</strong> the mixture is eaten as a<br />
dry snack. Previously corn was used to prepare this<br />
