Substituting vegetable protein <strong>for</strong> animal protein could<br />

help alleviate the shortage <strong>of</strong> animal protein that exists <strong>for</strong><br />

certain categories <strong>of</strong> infants <strong>and</strong> adults, <strong>and</strong> that can lead to<br />

kwashiorkor. Cassava, the main food <strong>of</strong> these countries, is<br />

rich in carbohydrates but low in protein. The use <strong>of</strong> <strong>soy</strong><br />

flour or cottonseed flour could add valuable protein to the<br />

diet. The <strong>soy</strong> flour could be used, as it has been elsewhere,<br />

to make <strong>soy</strong>milk <strong>for</strong> infants, tempeh, t<strong>of</strong>u, breads (add 35),<br />
