1. Stripping of stalks: Harvested stalks are stripped by removing the leaf<br />

lamina along with the sheath and panicles with peduncle as these<br />

contain very little sugar. The stalks are stored in shade for one or two<br />

days before milling for juice extraction. This conditioning allows the<br />

inversion of sucrose to reducing sugars and thus improves the quality<br />

of juice. Conditioning of stalks before milling also removes excess<br />

moisture from the stalks and increases the brix of juice which ultimately<br />

helps to reduce the time and fuel required for syrup concentration.<br />
