The vegetables taste so good when they are brought from the orchard. Many of<br />

the n<strong>at</strong>ives th<strong>at</strong> live in the city of Burgos cultiv<strong>at</strong>e orchards in the town and are pleased to<br />

be able to e<strong>at</strong> healthy vegetables th<strong>at</strong> they have seen grow and m<strong>at</strong>ure. As was<br />

commented before, today they prepare vegetables so th<strong>at</strong> they can be frozen for them to<br />

enjoy all year long.<br />

The form in making the food, its ingredients and the time dedic<strong>at</strong>ed to it, makes a<br />

huge difference in cooking. For example, in the past a blender was not used. As Nery<br />

said in one of her recipes, the mortar was wh<strong>at</strong> has always been used. I am sure th<strong>at</strong> the<br />

majority of people th<strong>at</strong> live in Ciadoncha prefer the mortar over the blender. In the<br />

mortar, garlic, parsley and pepper are crushed well. It is prepared like a paste and then a<br />

bit of w<strong>at</strong>er is added. It is then mixed in with the food.<br />

Life in the town is so different from life in the city th<strong>at</strong> here one feels invited to<br />

return to the past, taking their time for everything. During the summer, when one can see<br />

some families who return to spend some days in the town, one can see the pleasure th<strong>at</strong><br />

they feel <strong>at</strong> being able to dedic<strong>at</strong>e their whole morning to preparing good casseroles. It is<br />

not the same in the city, where one has to run around to go to work, drop off the children<br />

<strong>at</strong> school, etc... The most valuable thing about all the town food is th<strong>at</strong> it is very healthy.<br />

Here, everything is organic and no chemicals are ever used to cultiv<strong>at</strong>e or raise animals.<br />

A nice project would be to write a cooking book, with the grandmother’s recipes<br />

of details of how these dishes are prepared. Little by little they are remaining only in the<br />

memories of those of us who were lucky enough to taste them.<br />
