The m<strong>at</strong>anza provides more than just food. Soap is made with the pig’s f<strong>at</strong>. The<br />

f<strong>at</strong> is he<strong>at</strong>ed and then a bar of soap and sodium hydroxide are mixed well with the f<strong>at</strong>.<br />

This mixture is then placed into molds and is left to cool.<br />

As you can see, the only thing th<strong>at</strong> is not taken advantage of is the pig’s hair.<br />

But delicious pl<strong>at</strong>es can be prepared and good soap can be made. Whichever person who<br />

is not accustomed to particip<strong>at</strong>ing in the m<strong>at</strong>anza may think th<strong>at</strong> this work is very<br />

unpleasant, but very few will reject a good chorizo, sausage, ham, bacon, well prepared<br />

pork chop or ribs.<br />
