Tuğra adını mutfağını başarıyla günümüze uyarladığı<br />
Osmanlı’dan almış. Osmanlı zamanında Padişahların<br />
mühürlerine Tuğra deniliyordu. Tuğra da<br />
bu açıdan bakıldığında Osmanlı’nın imza yemeklerini<br />
günümüze taşıyan bir elçi görevi görüyor<br />
adeta.<br />
Mezeleriyle meşhur mekânın yemek sunumları da<br />
çok şık. Geleneksel motiflerle süslü özel tabakların<br />
sunumunu miğfer şeklindeki kapaklarla sunan restoran<br />
misafirlerini bir yandan da çalan eski saray<br />
müzikleriyle yüz yıllar öncesine götürüyor.<br />
Tuğra, Boğaz manzarasına sahip balkonu, ince bir zevkin eseri beyaz<br />
dantelli perdeleri, bej örtülerle kaplı masaları, özel tasarım tuğralı<br />
tabakları, lake ve kadifeleriyle Osmanlı saraylarının ihtişamını hatırlatıyor.<br />
Restoran misafirlerinin yüzde 70’i yabancı. Tuğra’nın çevre<br />
otellerden de müşterileri oluyor. Kendisi özellikle evlilik tekliflerinin<br />
popüler mekânı.<br />
Menüde, Osmanlı mutfağından dolma çeşitleri, pilavlar, köfteden<br />
kebaba et çeşitleri ve saray tatlılarına uzanan modernize edilmiş<br />
lezzetler yer alıyor. Yemeklerin özellikle pişirme<br />
yöntemleri ve kullandıkları pişirme kapları Tuğra’nın<br />
diğer Osmanlı yemekleri sunan restoranlara<br />
göre en büyük artılarından. Geleneksel yöntemlere<br />
bağlı kalınarak mevsimine uygun sebze meyve<br />
ve etlerle hazırlanan mezelerden oluşan tadımlık<br />
bir tabak sunuldu öncelikle Tuğra’da bize. Osmanlı<br />
döneminden kalma tariflere dayanarak incelikle<br />
seçilen ve hazırlanan soğuk atıştırmalıklar parmak<br />
ısırtan cinsten. Çerkes tavuğu, fava, mercimek köftesi,<br />
humus, kavun peynir aşina olduğumuz ancak<br />
Tuğra farkıyla sunulan başlıca lezzetlerdi. Ana yemek olarak özellikle<br />
bakır kapta uzun süre pişen ve özel sunumuyla adeta bir şova dönüşen<br />
testi kebabını ve Teşrifat-ı Naim Efendi adını taşıyan kâğıtta sarılı<br />
dana madalyon yemeğini denemenizi öneririz.<br />
Tatlı olarak kaymaklı dondurma ile servis edilen sakızlı muhallebi<br />
olan Helatiye ve elbette baklava denedik. Helatiye için son derece<br />
hafif ve lezzetli bir son vuruştu diyebiliriz. Baklava ise ne kadar tok<br />
olursak olalım, asla hayır diyemeyeceğimiz bir klasik lezzet.<br />
THE GRANDIOSE ADDRESS OF OTTOMAN CUISINE<br />
TUĞRA RESTAURANT<br />
Tuğra Restaurant unites the splendor of Ottoman palace cuisine and its glamourous<br />
ambiance with its guests, inside the Çırağan Palace. The restaurant provides<br />
service between the hours of 19.00 and 23.30 every day.<br />
Tuğra, is named after the Sultans’ seal in the Ottoman Empire,<br />
having successfully interpreted the cuisine of that period. Tuğra,<br />
fulfills the duty of an ambassador that brings the signature dishes of<br />
Ottomans to the present, in that respect.<br />
The presentation of the dishes is very elegant at the restaurant famous<br />
for its mezzes (side dishes). The ambiance filled with ancient palatial<br />
melodies takes you hundreds of years back, while dinner is served<br />
in traditionally adorned special plates covered with helmet-like lids.<br />
Tuğra is a reminiscent of the grandiose Ottoman Palaces with; a<br />
balcony facing the Bosphorus, drapery in white lace-a manifestation<br />
of refined taste, table covers in beige, exclusively designed<br />
crockery, all its lacquer and velvet. 70% of the guests are foreigners,<br />
however they receive customers from surrounding hotels as well.<br />
It is highly popular amongst people looking for a place to propose.<br />
The menu comprises modernized versions of dolma (stuffed<br />
vegetables) varieties, pilaf, meatballs, an assortment of kebabs<br />
and several palace desserts from the Ottoman cuisine. The cooking<br />
styles and the cookeries, is one of the features that distinct Tuğra<br />
from other restaurants serving Ottoman cuisine. At the beginning<br />
we were offered an appetizer prepared with vegetables, fruits and<br />
meat according to traditional methods, in Tuğra. An elaborate choice<br />
of cold snacks based upon recipes from the Ottoman period, were<br />
amazing. Circassian chicken, fava, lentil ball, houmus, melon, cheese<br />
were the basic tastes we’re accustomed to, yet found a different<br />
interpretaion at Tuğra. For main dishes; we strongly recommend<br />
you to try out the kebab cooked in seal clay pot over long hours<br />
and presented in a show-like manner, in addition to Teşrifat-ı Naim<br />
Efendi, paper-enwrapped beef medallion.<br />
The certain choice of dessert was Helatiye; mastic-gum pudding,<br />
with vanilla ice-cream on the side, which we could describe as the<br />
light and delicious final attempt. Baklawa, on the other hand, is a<br />
dessert we have trouble rejecting no matter how full we are.<br />
