produce cool-season vegetables like lettuce, broccoli, spinach, <strong>and</strong> cauliflower through most<br />

of the year for the rest of the country. The CentralValley is well suited for warm-season summer<br />

vegetables that require a long growing season <strong>and</strong> fertile soil like tomatoes <strong>and</strong> melons.<br />

Production areas like the Imperial Valley on the Mexican border in extreme Southern<br />

California can be used for vegetable production during the winter months. California has<br />

a dry climate with seasonal rainfall that inhibits fungal diseases of plants. Vegetable production<br />

uses large amounts of water. Federal water projects in the 1930s helped develop a<br />

sophisticated irrigation network of dams <strong>and</strong> reservoirs system that captures mountain runoff<br />

<strong>and</strong> redistributes water through a series of canals to fields during the dry summer months.<br />

In terms of markets, vegetable production targets one of two markets—fresh market or<br />

processed market.<br />
