18.1.2.1.3 Amines

A number of aliphatic and aromatic amines

are found in various fruits and vegetables (Tables

18.6 and 18.7 and 18.1.4.2.1). They are

formed in part by amino acid decarboxylation

such as in apples, or by amination (cf. Reaction

18.1) or transamination of aldehydes

(cf. Reaction 18.2).
