convenience with product quality/freshness. As long as<br />
you respect a principle that lies at the heart of<br />
American entrepreneurship: do one thing, just one, but<br />
do it really well. In other words, the watch word is specialization.<br />
And that is the secret of Sprouts Farmers<br />
Market, one of the hottest chains on the scene, which<br />
from its birth place in one of the unlikeliest of places for<br />
a F&V specialist, Phoenix (Arizona), is extending its<br />
operations in Colorado, Texas and California.<br />
Sprouts was founded by a family of entrepreneurs<br />
from San Diego, the heirs of Henry Boney, their grandfather,<br />
who, beginning with the classic fruit stall in<br />
1943, went on to create a series of small chains like<br />
Boney’s, Bradshaw’s, and Superama which he sold it<br />
in 1956, to then invent the Speedee Mart chain of C-<br />
Stores that was bought by 7-Eleven. In 1976, the<br />
Boney family launched Windmill Farms which specialized<br />
in health food, only to sell it in order to finance<br />
Henry’s Marketplace (1997), which in its turn was sold<br />
to Wild Oats. Finally, in 2002, Sprouts Farmers Market<br />
was born, a chain specializing in fresh produce, which<br />
today boasts more than 100 stores and annual sales<br />
of nearly $ 1.5 billion.<br />
Innovation in product assortment<br />
Sprouts is a hybrid. It remains open from 7 am to 11<br />
pm. It is based on a 3-4 thousand square meters format<br />
designed by the Los Angeles architectural firm<br />
Nadel in which there is space for about 40 thousand<br />
products, above all fresh produce, and 80-90 staff. It<br />
is inspired by principles derived from two models:<br />
Trader Joe’s (low prices, good communications and<br />
private labels) and Wholefoods (quality and organic<br />
products). In short, we are talking about a category<br />
killer with all the trappings of the fresh food store:<br />
simplicity, clarity in positioning, serial replicability. The<br />
winning factor, however, remains product depth and a<br />
F&V symbolize the Sprouts image.<br />

delle catene più “hot” dell’attuale panorama che, partita<br />
dal luogo più improbabile per uno specialista nell’ortofrutta,<br />
Phoenix (Arizona), si sta diffondendo in Colorado,<br />
Texas e California.<br />
Sprouts è stata fondata da una famiglia d’imprenditori<br />

a Wild Oats. Infine, nel 2002, ecco nascere Sprouts<br />
Farmer Market, la catena specializzata nel fresco, che<br />
vanta oggi più di 100 store e un fatturato che sfiora 1,5<br />
miliardi di dollari.<br />
Innovazione nell’assortimento<br />
Sprouts è un ibrido. Resta aperto dalle 7 del mattino alle<br />
11 di sera. È basato su un format, disegnato dallo studio<br />
Nadel di Los Angeles, di 3-4mila mq in cui trovano<br />
spazio circa 40mila referenze, soprattutto fresche o freschissime,<br />
gestite da 80-90 addetti. I suoi criteri ispiratori<br />
provengono dai modelli di Trader Joe’s (prezzo contenuto,<br />
comunicatività e private label) e Wholefoods<br />
(qualità e prodotti biologici). In breve, siamo di fronte ad<br />
un category killer degli alimentari freschi con tutti i crismi<br />
di questa tipologia di store: semplicità, chiarezza nel<br />
posizionamento, replicabilità seriale. <strong>Il</strong> fattore vincente,<br />
tuttavia, resta la profondità di assortimento aperta a un<br />
gran numero d’innovazioni: dai pomelo cinesi e ai tan-<br />
