LOTHAR KRÖCKEL, Nutzbarmachung mikrobiologisch-genetischer Ressourcen zur Biokonservierung von Fleischerzeugnissen<br />
Lactobacillus Arten L. sakei, Stämme Lb706 und<br />
Lb674, die die anti-listeriellen Bacteriocine Sakacin<br />
A und Sakacin P produzieren, sowie L. curvatus<br />
Lb1071, der das anti-listerielle Bacteriocin Curvacin<br />
1071 produziert (Kröckel 1998 c).<br />
Bedeutung <strong>für</strong> die Ressortforschung<br />
Schutzkulturen sind nur eine von mehreren<br />
Möglichkeiten zur Kontrolle unerwünschter Mikroorganismen<br />
bei gefährdeten Lebensmitteln und<br />
sie sind nur wirksam, wenn sie als zusätzliche<br />
Hürde zur Kühlung und Guten Herstellungspraxis<br />
eingesetzt werden. Sie sind jedoch eine interessante<br />
Alternative zu chemisch-physikalischen Hürden<br />
und ermöglichen die Herstellung von sensorisch<br />
hochwertigen Erzeugnissen mit geringer<br />
Verarbeitungstiefe. Die Ressortforschung trägt mit<br />
diesen Untersuchungen zur <strong>Aus</strong>lotung der Möglichkeiten<br />
der Biokonservierung bei und beteiligt<br />
sich damit an der internationalen Diskussion über<br />
innovative Konservierungsmöglichkeiten im<br />
Lebensmittelbereich.<br />
