FOCUS THALVIN Vin et gastronomie Plus de 80 années de vendanges et de vinification ont mené la société Thalvin née Ouled Thaleb sur le chemin des grands vins. La naissance des cuvées Président en 1953, Médaillon en 1978, CB en 1997, S de Siroua en 1999 et le dernier né Tandem en 2005, sont bien la marque des plus grands vignerons. Thalvin produit actuellement 3,5 millions de bouteilles, dont 8% sont exportées vers les meilleures tables du Monde. C’est un Groupe belge qui en 1923 crée le Domaine des Ouled Thaleb, qui va devenir la plus ancienne cave en activité au Maroc. Les premières vendanges ont lieu en 1926 et depuis, l’activité n’a jamais cessé. A l’époque, les vins sont exportés. La mise en bouteille en 1953 de la fameuse cuvée « Cabernet Président » va marquer le début de la commercialisation sur le marché national. En 1968, Messieurs Baconnet et Laraky créent la société Thalvin avec un domaine qui compte alors 450 ha. Ils installent les premières plantations de Syrah, parfaitement adaptées au terroir, puis Cabernet Sauvignon. En 1978 apparaît le premier Médaillon Cabernet rouge, suivi en 1983 du Médaillon Sauvignon blanc et en 2003 du Médaillon rosé de Syrah. Démarche qualitative Plus tard, dans un souci de diversification et de développement <strong>FOOD</strong> <strong>MAGAZINE</strong> - N° 5 / Du 15 Nov. au 15 Déc. 2008 28 qualitatif, Guy Baconnet et l’œnologue Jacques Poulain vont mettre en adéquation le concept cépage - terroir et planteront dès 1997 des Chardonnay, Viognier, Chenin, Tannat et Syrah. L’année 97 va connaître également le lancement du CB Initiales en rouge et en blanc. C’est la première fois qu’un blanc (Chardonnay) est vinifié et élevé en barrique. «Notre démarche est qualitative pour aller chercher de la matière et de la puissance, avec des vins ayant des potentiels de vieillissement de 4-5 ans», confie Jacques Poulain. Belle récompense d’ailleurs pour les CB rouge et blanc reconnus par les plus grands sommeliers du monde et présents sur les meilleures tables : le Ritz et l’hôtel Meurice à Paris, ou encore chez Alain Ducasse. A <strong>parti</strong>r de 2001, Brahim Zniber, qui vient d’acquérir la cave Thalvin, va encourager la démarche qualitative afin de mieux valoriser les raisins et les terroirs : amélioration des techniques de vinification, tri sélectif de chaque raisin avant l’entrée en cave, séparation des cépages et des lieux de provenance, vendange tôt le matin et tard dans la journée, chargement immédiat en caisse de 25 kg dans des camions frigo pour éviter l’altération… Les dernières plantations, de nouveaux Special Vins cépages du sud-ouest de la France, sont très adaptés à la diversité des terroirs et surtout au climat comme le Malbec de Cahors, ou encore l’Arinarnoa, issu d’un métissage Petit-Verdot / Merlot, résistant très bien à la sécheresse. Enfin, le tout dernier-né Tandem est le fruit d’une collaboration entre Alain Graillot, l’un des plus grands vignerons français, adepte de la Syrah, et Jacques Poulain, dont c’est la 12 ème vendange chez Thalvin. Ce vin, qui a reçu un vif succès, a été produit en 2005 à 30.000 bouteilles, dont 29.000 vendues à l’export (Japon, Australie, Corée du Sud, USA, Scandinavie…). Les millésimes 2006 et 2007 ont confirmé cette réussite, avec respectivement 60.000 et 110.000 bouteilles. Une création de Syrah qui contribue avec d’autres grandes caves à la noblesse des vins marocains. Œnotourisme. Le Ryad du Vigneron Depuis 2007, Thalvin joue la carte de l’oenotourisme au Maroc avec un restaurant dédié aux vins de la propriété. Comme une maison qui abrite l’âme d’une famille, le Ryad du Vigneron propose de découvrir chaque jour le menu vigneron autour des vins du Domaine des Ouled Thaleb, de déguster une cuisine bourgeoise de terroir, où les saveurs océanes se mêlent aux produits de la terre. Avant ou après le repas, entre palmiers et potager, sur la terrasse ou en bord de piscine, ce restaurant s’inscrit dans l’évasion et la tradition.
