ABSTRACT
The study focused the construction and validation of an instrument for the evaluation
of gourmet candies, especially those called Brigadeiros, from the perspective of the
consumer. To achieve this objective, the study addressed the story of the Brigadeiro
as a singular product with national acceptance among gourmet candies, the review of
legal documents related to food and examples of tests performed with similar
candies. The methodological procedures have led the process to create a
questionnaire aimed to understand customer’s perspective, the questions to be
applied and the most relevant factors that must integrate this instrument to assess
refined candies. After data collection and treatment, the main results identified the
target public preferences and perspectives. Additionally, opportunities to improve the
market of Brigadeiro in a high quality standard were recognized. These results have
indicated that the elaborated instrument was able to reach the study objective.
Respondents’ suggestions were incorporated to the final version of the instrument
that might be used by other entrepreneurs.
