themselves experts on it. They all believe, and care that they believe, that they know what it consists of, how it is made, and how it should taste. In short, a genuine cuisine has common social roots, it is the food of a community – albeit often a very large community. 18 I see ‘cuisine ’ as an expression of culinary activity characteristic of a particular community, which entails selecting foodstuffs, transforming them according to specific techniques and flavouring principles, and consuming them according to particular rules. 19 While a classic idea of a cuisine implies a local and often class-specific scope, the concept of a ‘national cuisine’ stands for an imagined national identity and cultural homogeneity. 20 Thus, the making of a national cuisine entails the replacement of diversified, community-tied local practices with a cuisine that is the same for all. All Japanese words in this book have been indicated in italics, except for personal, geographical and institutional names, as well as words that have by now entered the English language, such as ‘samurai’ and ‘sushi’. Diacriticals have been omitted in the names of main Japanese cities and the four main islands. Food-related Japanese terms have been briefly explained in the text and in more detail in the Glossary. Japanese names are presented following the Japanese convention in which the family name precedes the given name, except for authors who have published in English. In order to provide suggestions for further reading, I refer to English-language, rather than Japanese-language, publications and sources, whenever they are available. 12
One Western Food, Politics and Fashion ‘Restoring’ the Imperial Rule On 4 November 1871 distinguished foreign officials residing in Japan gathered for a dinner party commemorating the birthday of Emperor Meiji (1852–1912) the day before. The banquet was prepared by Hôtel des Colonies (also known as Tsukiji Hotel or Yedo Hotel), the only Westernstyle hotel in the city of Tokyo at the time. It was managed by Monsieur Ruel and was renowned for its exquisite French cuisine prepared under the supervision of the French chef Bégeux.
