STATISTICAL AND SCIENTIFIC FACTS ON DIET.
The following table presents the numbers expressing
the composition of the principal kind of food made use
of, as well as that of flesh ; thus affording a comparison
of the nutriment of each article of vegetarian diet, with
that of the flesh of animals.
The conclusions of this table are from the results of
analyses by Playfair, and other chemists of established
of nutriment
repute ; and the separation of their parts
into flesh-forming principle, heat-forming principle, and
ashes, is in relation to the necessary elements of food
suited to the wants of the body, according to the views
of the modern school of Chemistry, after Liebig.
