Fotos Recetas: Víctor Ramírez Foto Leandro Díaz: cortesía del chef Mofongo Power La Mocheta INGREDIENTES: 5 onzas de yuca frita 1 diente de ajo 1/2 onza de fondo vegetales 1/2 onza de fondo de pimiento rojo asado 2 onzas de chicharrón 1 onza de longaniza Sal 2 onzas cremoso de yuca 1 onza de mozarella rallada 1/4 taza de crema de leche 1 porción de barrigón relleno 1 onza de reducción del barrigón de Leandro 1 cucharadita de puerro picado ½ cucharada de virutas de chorizo PREPARACIÓN: En un pilón, majar el ajo y la sal, luego el chicharrón y la longaniza. Después de esa mezcla, procedemos a incorporar la yuca frita por parte e ir hidratando con los fondos. Rectificamos la sal y procedemos a armar nuestro mofongo, con ayuda de las manos (preferiblemente con guantes). En una sartén, procedemos a hacer nuestra crema uniendo la crema de leche, el cremoso de yuca y el queso mozzarella. Vertemos la crema en el mofongo, luego montamos el barrigón relleno, reducción de barrigón y terminamos con las virutas de chorizo y el puerro picado. *Puedes sustituir el barrigón por alguna proteína de su preferencia: pechuga, chicharrón, etcétera.
