FoCUS Classement Le Maroc revient dans la course Dans le groupe des pays qui se hissent au top du classement mondial des producteurs d’huile d’olive, le Maroc est sixième. Il occupait il y a deux décennies seulement une confortable quatrième position. Depuis, le pays a perdu ses marques, mais il tente de revenir dans la course… Ses concurrents directs aussi. Abdelaziz MEFTAH Depuis les années 70, le Maroc n’a pas cessé de dégringoler dans le palmarès mondial des principaux pays producteurs d’huile d’olive. Actuellement il pointe à la sixième position du classement alors qu’il occupait un confortable quatrième rang il y a trente ans. Pour rappel, le pays a produit en 2007 80.000 tonnes d’huile, en hausse de 6,7% par rapport aux 75.000 tonnes produites en 2006. En fait, les quantités produites par le pays n’ont pas enregistré de recul notable. Ce sont surtout ses concurrents directs qui ont pu développer leurs aptitudes. En vingt ans, le Maroc a ainsi été supplanté par la Tunisie, puis <strong>FOOD</strong> <strong>MAGAZINE</strong> - N° 7 / Du 15 Jan. au 15 Fév. 2009 22 par la Syrie qui n’avait pas droit de cité au niveau du top ten. En outre, si rien n’est fait dans les quelques années à venir, d’autres pays risquent d’enfoncer le Maroc dans le classement. Il s’agit plus particulièrement de la Turquie, de l’Argentine et probablement sous peu de l’Algérie qui revient de très loin, ou encore de la Jordanie et de la Palestine qui grignotent de plus en plus de marge. D’ailleurs les Argentins exportent déjà plus que le Maroc tout comme les Tunisiens et les Syriens (voir tableau). La qualité de l’huile produite continue de jouer des tours aux opérateurs dont une majorité n’arrive pas à positionner leurs références sur certaines platesformes exigeantes. L’Espagne, avec, à elle seule, 300 millions d’oliviers, couvrant deux millions d’hectares, soit 27% de la superficie mondiale d’oliveraies et environ 260 variétés d’oliviers cultivées, est le 1 er exportateur en la matière dans le monde. Le pays produit entre 750.000 et 1,5 million de tonnes d’huile d’olive annuellement et en exporte entre 300.000 et 600.000 tonnes vers les 5 continents. L’Espagne arrive largement en tête devant l’Italie qui a produit 470.000 tonnes au terme de la campagne 2007-2008 puis de la Grèce qui occupe le troisième rang avec une production de 307.000 tonnes. Ce peloton de tête distance de plusieurs longueurs les autres concurrents, dont la Tunisie qui arrive quatrième avec une production de 170.000 tonnes au terme de la même campagne. Au niveau de ce pays, l’oliveraie couvre une superficie de 1,67 million d’hectares (soit le tiers de la surface cultivée du pays), où sont plantés quelques 65 millions d’oliviers. Ce potentiel a permis à la Tunisie d’avoir une récolte 2006-2007 avoisinant les 900.000 tonnes d’olives. Par ailleurs les Tunisiens n’entendent pas s’arrêter en si bon chemin puisque 1,9 millions d’arbustes ont été plantés au cours de la saison 2007-2008, ce qui représente une évolution de 120% des plantations par rapport à la saison précédente. Le Maroc s’inscrit également dans la même perspective. Mais il table également sur la qualité. Preuve en est, les distinctions décrochées par certaines références dans des concours prestigieux. Seulement voilà, la cadence n’y est pas. Or, le temps joue contre les opérateurs nationaux. C’est maintenant que le raffermissement des positionnements se décide.
