Level 1 Culinary SkillsA one-year course designed to build up your basic knowledgeand understanding of the principles of food preparation. You willfocus on: knife skills, kitchen equipment, food safety, and cookerytechniques such as steaming, boiling, poaching, braising, roasting,grilling, and baking.Level 2 Culinary SkillsA one-year course focusing on employability skills, cateringoperations, costs and menu planning, and health and safety in theworkplace. You will also learn more advanced cookery techniquesincluding: basic butchery, fishmongery, stocks soups and sauces,poultry, meat & offal, rice, grain and pulses & vegetables.Level 3 Professional CookeryA one-year course focussing on developing supervisory skillsas well as your competence in preparing, cooking and finishinga variety of produce including meat, offal, poultry, game, fishand shellfish.
