Level 1 Culinary Skills

A one-year course designed to build up your basic knowledge

and understanding of the principles of food preparation. You will

focus on: knife skills, kitchen equipment, food safety, and cookery

techniques such as steaming, boiling, poaching, braising, roasting,

grilling, and baking.

Level 2 Culinary Skills

A one-year course focusing on employability skills, catering

operations, costs and menu planning, and health and safety in the

workplace. You will also learn more advanced cookery techniques

including: basic butchery, fishmongery, stocks soups and sauces,

poultry, meat & offal, rice, grain and pulses & vegetables.

Level 3 Professional Cookery

A one-year course focussing on developing supervisory skills

as well as your competence in preparing, cooking and finishing

a variety of produce including meat, offal, poultry, game, fish

and shellfish. You will complete the course with a synoptic

assessment producing four courses in 5 hours.

Irrespective of your GCSE results, most students will start

at level 1 and learn basic skills before progressing through

the levels.

VOCATIONAL COURSES - HOSPITALITY & CULINARY ARTS

Progression opportunities

After completing their Level 3 course, students are fully

qualified with the necessary skills to go straight into

employment. Alternatively, you may wish to progress onto

further study to complete an HND, foundation degree, or

degree in professional cookery or culinary arts.
