The staff of one of the six large kitchens at Villa Olimpica pauses before<br />
the <strong>Olympic</strong>-period rush. It was a tremendous task feeding more than 6,000<br />
hungry athletes and several thousand other participants three meals a day—<br />
plus off-hour snacks. But the 1,230 employees assigned to the cafeteria-style<br />
operations were aided by the most modern kitchen equipment available. A<br />
special Quality Control Center set up a laboratory at Villa Olimpica for continual<br />
vigilance of food items as well as general sanitary conditions.
