Yummy Morning Muffins<br />

Baking is a great way to introduce your child to measurement and the use of<br />

simple tools. He will also observe how the ingredients change color and texture<br />

after baking. Here’s an easy, healthy muffin recipe—of course, you will need to do<br />

most of the work, but let your child be your helper!<br />

3 eggs 1 cup whole wheat flour<br />

½ cup sugar 1 cup all-purpose flour<br />

½ cup vegetable oil 1 tablespoon baking powder<br />

1 cup grated apples ¼ teaspoon salt<br />

1 cup grated carrots 1 teaspoon cinnamon<br />

Preheat the oven to 375 degrees. Grease or line a muffin tin with paper liners.<br />

Let your child help blend the eggs, sugar, and oil with a hand beater or a whisk.<br />

Let him dump in the grated apples and carrots as you stir. In a separate bowl, let<br />

your child help sift the flours, baking powder, salt, and cinnamon. Add this to the<br />

apple mixture and stir until just combined. Spoon the batter into 12 muffin tins<br />

and bake for 25 minutes or until golden brown.<br />

Enjoy the smell while the muffins are baking and then enjoy eating them for<br />

breakfast or snack.<br />

The Train that Could<br />

Gather a few medium-sized cardboard boxes, punch a hole near the top of the<br />

shorter sides of the boxes and tie pieces of yarn or heavy string through them.<br />

Tie the boxes together. Leave the string on one box long enough for your child<br />

to hold.<br />

Explain to her that you are making a train and that she can be the engine that<br />

pulls the load.<br />

See what your child chooses to put in the “box cars” as she pulls her train from<br />

room to room.<br />

In addition to playing with the train, you and your child can use it at clean up<br />

time to gather toys and transport them back where they belong. The train is a<br />

“simple tool” to help make this job easier!<br />

A variation of this activity is to tie laundry baskets together, in place of the boxes,<br />

to make the train.<br />
