It is encouraging that half of the monthly earning of the Tour and Travel establishments is from the<br />
tourists visiting the state. Balance income is from other sources including bookings, ticketing and other<br />
services rendered outside of the state.<br />
C. Restaurants Survey:<br />
Among the 39 restaurants interviewed, 44 percent were started during last 10 years. In one fourth of<br />
them, more than 20 persons are employed. The average number of employees in the present sample of<br />
Restaurants is 18. The restaurants were interviewed in a pre-designed questionnaire.<br />
The monthly income of 8% of the restaurants is more than Rs.5 lakhs and the average income is Rs.2,07,071.<br />
For 8% of the restaurants, more than 50% of their monthly income is from the tourists.<br />
These restaurants cater to both domestic and foreign tourists travelling to key destinations in <strong>Kerala</strong>. As<br />
per 2004 estimates, conventional restaurants account for the largest population (30%) followed by bakeries/<br />
related outlets (16%), quick service outlets (16%) and equivalent of dhabas (Thattukadas) (13%).<br />
We estimate that there is an annual increase of 10-15% in the number of restaurants in <strong>Kerala</strong>.<br />
Employment in the Restaurants:<br />
Seeing from the trend across the country, there is an average of 26 people employed (both permanent<br />
and temporary) for every 100 chairs in restaurants and almost 80% are employed in the kitchen and<br />
service functions, while the balance are almost equally distributed between management, store, security,<br />
maintenance and delivery. The <strong>Kerala</strong> picture is similar as is evident from the data below.<br />
The number of restaurants is also increasing over the years in <strong>Kerala</strong>. About 44% of them started functioning<br />
since last 10 years.<br />
In 25% of the restaurants, more than 20 employees are working and in 38% 11-15 employees are engaged.<br />
The average number of employees in restaurants is 18 and bulk of them are engaged in the kitchen and<br />
service. All the restaurants employee staff in kitchen and service, but in other departments viz. Accounts.<br />
Purchase, Stores, Security, Maintenance and Delivery, very few employ separate staff.<br />
Only 20% of those employed in the service function of restaurants, cafes and fast food outlets are hotel<br />
management degree/diploma holders. Approximately 75% of them are either SSC pass or school dropouts.<br />
Approx. 83% of people employed in other functional areas of restaurants such as store, delivery, security<br />
and maintenance SSC pass or school dropouts.<br />
Only 8% restaurants are have an income of above Rs.5 lakhs and this might be the reason for the low<br />
payment of the taxes. Only 15% of the restaurants pay more than 10% of their monthly income as local<br />
and other taxes.<br />
For about 54% of the restaurants more than 25% of their monthly income is from the tourists visiting the<br />
State, while for 8% more than 50% of the income is from tourists visiting the State. Balance income is<br />
generated from other segments of the population.<br />
