459Results and DiscussionPhysico-chemical characteristicsThe physico-chemical composition of the maize and wheat fl ours ispresented in Table 1. The maize cultivars were signifi cantly different <strong>for</strong>1000 grain weight as well as dehulling and milling rates. These traitsare recognised as indexes of the technological effi ciency of grains. Theobserved variability <strong>for</strong> the traits was infl uenced by both genetic andenvironmental effects thus confi rming earlier reports (FAO 1993). On acomparative basis, there was no signifi cant difference (P>0.05) betweenmoisture and protein contents of the maize fl our. The protein valuesobtained in the present study were lower than the 7.5% obtained <strong>for</strong>the maize fl our in the study reported by Ndjouenkeu et al.
