459Results and DiscussionPhysico-chemical characteristicsThe physico-chemical composition of the maize and wheat fl ours ispresented in Table 1. The maize cultivars were signifi cantly different for1000 grain weight as well as dehulling and milling rates. These traitsare recognised as indexes of the technological effi ciency of grains. Theobserved variability for the traits was infl uenced by both genetic andenvironmental effects thus confi rming earlier reports (FAO 1993). On acomparative basis, there was no signifi cant difference (P>0.05) betweenmoisture and protein contents of the maize fl our. The protein valuesobtained in the present study were lower than the 7.5% obtained forthe maize fl our in the study reported by Ndjouenkeu et al.
