Clearly, the compositional complexity of commercial cocoa butter complicates<br />

our underst<strong>and</strong>ing of its crystallization <strong>and</strong> polymorphic transitions. However, the<br />

phenomena observed with pure phospholipids in cocoa butter may be of general use<br />

in the fats <strong>and</strong> oils industry with regard to the control <strong>and</strong> manipulation of solidification<br />

during processing.<br />
