a. Stereospecific Analysis. Figure 13 shows the stereochemical configuration of<br />

a TAG molecule with sn notation indicating the stereochemical numbering system.<br />

The positional distribution of SFCA, MCFA, <strong>and</strong> LCFA on the glycerol moiety of<br />

SL is important in relation to the physical <strong>and</strong> functional properties of the SL, <strong>and</strong><br />

its metabolism. As indicated below, the absorption <strong>and</strong> transport pathway of the SL<br />

depend somewhat on the fatty acid at the sn-2 position. In most vegetable oils,<br />

unsaturated fatty acids occupy the sn-2 position <strong>and</strong> saturated fatty acids are located<br />
