3. Polyunsaturated Fatty Acids<br />

Fungi of the Mortierella sp. are capable of converting linoleic acid into �-linolenic<br />

acid (83) <strong>and</strong> an oil containing �-linolenic acid to an oil containing eicosapentaenoic<br />

acid as shown in Fig. 10 (84).<br />
