by mass spectrum, as shown in Figure 17. The formation of 2-pentenylfuran<br />

increased with increasing storage time <strong>and</strong> concentration of chlorophyll, as<br />

shown in Table 7. 2-Pentylfuran <strong>and</strong> 2-(2-pentenyl)furan were formed only in the<br />

presence of light <strong>and</strong> chlorophyll in soybean oil. Soybean oil containing 5 ppm<br />
