A limited number of published human studies have examined the influence of<br />

amount of dietary fat on immune responses. In one experiment, seven healthy women<br />

lived in a metabolic suite <strong>and</strong> were fed a diet that provided 41% of energy from fat<br />

<strong>and</strong> 5% from PUFAs [16]. The subjects were divided into two groups that consumed<br />

either 26% of energy from fat with 3.2% from PUFAs or 31% of energy from fat<br />

with 9.1% PUFAs; the study was conducted in a crossover design. Both low-fat diets<br />

resulted in significant increases in serum complement fractions C3 <strong>and</strong> C4, as well<br />

as mitogenic responses of peripheral lymphocytes, phytohemagglutinin, con A, protein<br />

A, <strong>and</strong> pokeweed mitogen. The results are similar to those of Meydani et al.<br />

[13], cited above, namely, that lower fat diets increased blastogenic response of blood<br />

lymphocytes to con A. In another study, healthy women were fed either 3% or 8.3%<br />

of energy as linoleic acid [17]; increasing dietary 18:2 led to higher prostagl<strong>and</strong>in<br />

levels in urine but lower thrmoboxane B 2 <strong>and</strong> no change in prostagl<strong>and</strong>in F 1�.<br />
