SPARKLING - Cava<br />

Cava is a sparkling wine that originates from<br />

Catalonia, a region in north-eastern Spain. It is<br />

made using the same traditional method as<br />

Champagne, known as the méthode<br />

champenoise or traditional method.<br />

It is typically produced from a blend of three grape<br />

varieties: Macabeo, Parellada, and Xarel·lo, although<br />

other local grape varieties such as Chardonnay and<br />

Pinot Noir can also be used. The production process<br />

involves a second fermentation that occurs in the<br />

bottle, resulting in the characteristic bubbles<br />

of the wine.<br />

Cava comes in different styles ranging from dry to<br />

sweet, with varying levels of sweetness labelled as Brut<br />

Nature, Extra Brut, Brut, Extra Seco, Seco, Semiseco,<br />

or Dulce. It is known for its crisp acidity, fruity flavours,<br />

and a wide range of aromas including citrus, apple,<br />

floral, and nutty notes.<br />

Cava is a popular choice for celebrations and is often<br />

served as an apéritif or paired with a variety of dishes,<br />

including seafood, poultry, and light appetisers. It has<br />

gained international recognition and is enjoyed by<br />

wine enthusiasts around the world.<br />

bubbles, with citrus aromas and a white fruit<br />

palate that ends with a long, persistent and<br />

delicate flavour.<br />

The Spanish word cava means “cave” or “cellar”, as<br />

caves were used in the early days of cava production<br />

for the preservation or aging of wine.<br />

Spanish winemakers officially adopted the term<br />

‘Cava’ in 1970 to distinguish their product from<br />

French Champagne.<br />

This excellent dry Cava has a very pale primrose<br />

transparency and a fine bead. It has a fine<br />

delicate aroma, slightly lemony nose with<br />

touches of butter and yeast from ageing. It<br />

is very fruity, creamy and silky on the palate.<br />

A Cava of great finesse, fruity with notes of<br />

toasted brioche from the lees ageing,<br />

This has an elegant, brilliant pale raspberry<br />

colour, well developed summer fruit aromas,<br />

light, fresh and floral fruitiness on the palate<br />

with a dry finish. Excellent as an aperitif or with<br />

fish and meat. If pairing with food, try with<br />

pasta, rice dishes and Mediterranean food in<br />

general.<br />
