Pet Nat<br />

Pet Nat (short for Pétillant-Naturel) is a type of<br />

sparkling wine that is made using the ancestral<br />

method, which is the oldest method for making<br />

sparkling wine.<br />

It is a natural sparkling wine that is made by bottling<br />

the wine before fermentation is complete, allowing<br />

the fermentation to finish in the bottle, which creates<br />

natural carbonation.<br />

Pet Nat wine is made from grapes that are harvested<br />

at an earlier stage of ripeness than those used for<br />

traditional sparkling wine, which gives it a lower alcohol<br />

content and a lighter, fresher flavour profile. The wine is<br />

bottled with the yeast still active, and the fermentation<br />

process continues in the bottle, creating carbon dioxide,<br />

which gives the wine its effervescence.<br />

Because the fermentation process is less controlled<br />

than with other methods of making sparkling wine,<br />

the resulting wine can have a range of flavours and<br />

textures, from fruity and floral to yeasty and funky. Pet<br />

Nat wines are often unfiltered and may have a cloudy<br />

appearance due to the presence of yeast sediment in<br />

the bottle.<br />

Pet Nat wines have gained popularity in recent<br />

years as a natural, artisanal alternative to traditional<br />

sparkling wines.<br />

Aromas of citrus fruits, combined with floral and<br />

mineral notes. This creates a lovely freshness<br />

and elegance in mouth which is in addition to<br />

an acidity allowing balance between aromatic<br />

power and softness. Serve 4 to 8 °C. Perfect for<br />

Aperitif or starters such as confit of poultry with<br />

pears or dried fruits, scallops or river fish.<br />

Naturel Rosé<br />

Burgundy, France<br />

A delightfully lively wine with a subtle red berries<br />

aroma and delicious tartness on the palate. This<br />

is a beautifully dark pink colour in the glass<br />

and pairs perfectly with ice creams or a palate<br />

cleanser at the end of a meal. Serve 4 to 8 °C<br />

during aperitif and dessert, 6° to 9° during the<br />

meal.<br />

The Moutard family is one of the leading Champagne producers (see next page). Several<br />

years ago the family purchased a domaine in Burgundy and began producing a range of<br />

interesting offerings, including Pétillant-Naturel - and the Pet’ Mout’ range was born!<br />

The wines are produced according to Methode Ancestrale<br />

- a traditional method of making sparkling wine that is, in<br />

fact, the world’s most ancient. The wine is bottled before the<br />

primary fermentation is finished, delivering a lower pressure,<br />

lightly sparkling wine in the pétillant style. The wine is finished without the<br />

addition of secondary yeasts, sugars, or sulphites. Grapes used for both of<br />

these wines are sustainably farmed and harvested from the Area of<br />

Tonnerre, which is close to Chablis in Burgundy.<br />

So, what’s this got to do with the flatulent sheep on the label? The name<br />

is a play on words: it could be an abbreviation of Pétillant Moutard, or an<br />

alternative is Péter Mouton (French dictionaries at the ready!). Even serious<br />

wine can have a bit of fun.<br />
