necessary to o into the study of all those factors that improve its availability. In<br />

this sense, certain components of milk and infant formulas such as lactose,<br />

glucose polymers, and caseinephosphopepti<strong>de</strong>s may improve zinc absorption<br />

and, in the case of caseinephosphopepti<strong>de</strong>s, diminish interactions with other<br />

mineral elements as well. This positive effect of caseinephosphopepti<strong>de</strong>s could<br />

be attributed to an increase in zinc solubility when it is bound to phosphoserine<br />

residues or to zinc-caseinephosphopepti<strong>de</strong> complex that is absorbed by a<br />

pathway different as the free ion from which there is no interaction with other<br />

divalent cations at brush bor<strong>de</strong>r membrane level. A positive effect has also<br />

been observed on zinc absorption to low intakes of some kind of fiber; as a<br />

consequence this element is bound by uronic acid residues, keeping it soluble<br />

in lumen intestinal. This effect is not observed for high intakes of fiber, from<br />

which it is necessary future investigations that clarify wheter the traditional<br />

negative effect of fiber on mineral absorption is due itself to fiber fractions or to<br />

some impurities in fiber materials such as phytic acid. Formulation foods with<br />

compounds that improve zinc availability must be accompanied by an<br />

appropriate manufacture that reduces the negative effect of some thermal<br />

treatments and of fortification with salts, which not only increases availability,<br />

but rather are also soluble and do not modify sensorial food characteristics.<br />
