In this sense, certain components of milk and infant formulas such as lactose, glucose polymers, and caseinephosphopeptides may improve zinc absorption and, in the case of caseinephosphopeptides, diminish interactions with other mineral elements as well. This positive effect of caseinephosphopeptides could be attributed to an increase in zinc solubility when it is bound to phosphoserine residues or to zinc-caseinephosphopeptide complex that is absorbed by a pathway different as the free ion from which there is no interaction with other divalent cations at brush border membrane level. A positive effect has also been observed on zinc absorption to low intakes of some kind of fiber; as a consequence this element is bound by uronic acid residues, keeping it soluble in lumen intestinal. This effect is not observed for high intakes of fiber, from which it is necessary future investigations that clarify wheter the traditional negative effect of fiber on mineral absorption is due itself to fiber fractions or to some impurities in fiber materials such as phytic acid. Formulation foods with compounds that improve zinc availability must be accompanied by an appropriate manufacture that reduces the negative effect of some thermal treatments and of fortification with salts, which not only increases availability, but rather are also soluble and do not modify sensorial food characteristics.
