Standard Fe solutions were prepared immediately before use by dilution<br />

of a standard solution of 1000mg Fe /L (Titrisol, Merck, Darmstadt, Germany).<br />

All reagents used were of reagent gra<strong>de</strong> and Millipore-Milli Q (Millipore<br />

Ibérica S:A:, Barcelona, Spain) distilled-<strong>de</strong>ionized water (DDW) was used<br />

throughout.<br />

Bathophenantroline (4,7-diphenyl-1,10-phenanthroline disulfonic acid)<br />

(Sigma B-1375) was used. A solution was prepared by dissolving in DDW<br />

12.5mg of bathophenantroline and 8.203 g of sodium acetate, after which the<br />

volume was completed to 50 mL with DDW.<br />

The reducing solution was prepared by dissolving 6.25g of<br />

hydroxylamine hydrochlori<strong>de</strong> (Aldrich, 15,941-7) in 25 mL of DDW. The<br />

precipitation solution was prepared by mixing 10g trichloroacetic acid and 10<br />

mL HCl (sp. gr 1.19) in 100 mL of DDW.<br />

Contamination control: in or<strong>de</strong>r to avoid metal contamination glassware<br />

was washed and rinsed with water and soaked in concentrated nitric acid<br />

(sp.gr.1.40) for 15 min.. Then it was rinsed several times with DDW.<br />

2.3. In vitro digestion: Solubility method<br />

A modification of the method <strong>de</strong>veloped by Sauquillo (29) was used.<br />

DDW (60mL) was ad<strong>de</strong>d to 30g of meal, and the pH was adjusted to 2.0 with<br />
