Ingredientes para 6 Pessoas:<br />
1 kg <strong>de</strong> borrego<br />
0,5 kg <strong>de</strong> ervilhas<br />
1 kg <strong>de</strong> túberas<br />
Azeite<br />
Cebola<br />
Alho<br />
Louro<br />
Faz-se um refogado com o azeite, cebola, alho e louro. Acrescenta-se o borrego e um pouco <strong>de</strong><br />
água para guisar. Tempera-se e <strong>de</strong>ixa-se apurar um pouco mais <strong>de</strong> meio <strong>de</strong> cozedura, retira-se<br />
alguma espuma e acrescentam-se as ervilhas e as túberas às falhas. Rectificam-se os temperos e<br />
<strong>de</strong>ixa-se apurar.<br />
