HRC 300 Colloquium on Human Rights (¼)<br />

A capstone experience for the minor in human rights and conflict studies. For this project,<br />

students in the minor come together, under the guidance of a faculty member (or<br />

members) to share their various perspectives on human rights and create (individually or<br />

communally) a final product, which can take several possible forms, such as an<br />

integrative essay, performance, or community action plan. Prerequisite: completion of the<br />

area requirements for the human rights and conflict studies minor; the fifth course may be<br />

taken concurrently.<br />

HRC 434 Introduction to International Human Rights Law (1)<br />

A seminar on international law with an emphasis on human rights. Concepts and<br />

principles, functions and processes associated with international law are applied to<br />

general categories of human rights. Special attention is paid to the International Criminal<br />

Court, war crimes, genocide, children’s rights, human trafficking, modern slavery,<br />

workers’ rights, gender and health issues, the environment, indigenous rights, torture, and<br />

punishment. Student engagement with a human rights institution is a requirement. (Also<br />

listed as PS 434.) Prerequisite: at least junior standing. Spring of odd-numbered years.<br />

An exploration of a selected topic or problem in health sciences.<br />

HS 105 ES Hot Topics in Food and Nutrition (1)<br />

A discussion-based seminar spanning controversial and popular topics in the realm of<br />

food and nutrition. Topics may include fad diets, foodborne illness, food security,<br />

farming methodology, genetically modified foods, the role of the U.S. government in<br />

nutrition guideline, and industry’s role in determining the regulation of our food. An<br />

Explorations in Scholarship designated course.<br />

HS 200 Introduction to Nutrition (1)<br />

An introduction to the science of human nutrition and dietetics. Topics include essential<br />

nutrients and their relationship to health and metabolism, dietary recommendations for<br />

wellness, and an overview of nutritional requirements across the life cycle. A Poverty<br />

Studies and Public Health Studies designated course. Prerequisite: BI 115. Spring.<br />

HS 203 Human Physiology (1)<br />

A study of the fundamental functions of human organ systems and their significance to<br />

human health. Intended for students interested in pre-nursing, pre-pharmacy, allied health<br />

or related fields; not intended for pre-medical students. Prerequisites: BI 115 and BI 125.<br />
