Dulce de batata<br />
Es muy propio de la gastronomía nacional y se elabora con leche, azúcar,<br />
coco y la antigua batata o aje, que consumían los taínos. Al dulce de<br />
batata se le aprecia por su buen sabor, su consistencia y cremosidad.<br />

El chicharrón de leche<br />
Es originario del Este dominicano, especialmente de Higüey. Se prepara<br />
con leche fresca, azúcar, canela y cuajo, una sustancia activa de origen<br />
animal que provoca la transformación o cortado del lácteo, ya que una<br />
parte se convierte en sólido y otra en suero. Una vez la leche se “corta” y<br />
se escurre en coladores de tela, se compacta una masa, que se fracciona<br />
en pedazos, los cuales se cuecen en almíbar.<br />
Jalao<br />
Este dulce es muy sencillo y rápido de elaborar. Sus ingredientes básicos<br />
son el coco rallado y la miel de abejas. Tras mezclarse hay que<br />
darle forma en pequeños montículos, que son llevados al horno en una<br />
bandeja. La apariencia del jalao es oscura y sólida. Es de los dulces que<br />
conforman la identidad gastronómica.<br />
Pasta de leche<br />
Elaborada en base a la leche de vaca, entre sus ingredientes se encuentran<br />
el azúcar, la maicena y la sal. La apariencia sólida de la pasta<br />
de leche se la proporciona su lenta forma de cocción en un caldero de<br />
grueso fondo, donde hay que batir el dulce constantemente una vez se<br />
retira del fuego. Luego se coloca sobre papel encerado y se le da forma<br />
rectangular. Se suele rellenar de pasta de frutas deshidratadas como<br />
guayaba, naranja e higos.<br />
Cortado de leche<br />
Este postre típico hace las delicias de los paladares. Aunque también se<br />
prepara en otros países, el dominicano lo distingue como propio. Existen<br />
varias formas de preparar el dulce de leche cortada, que tiene entre sus<br />
ingredientes básicos limón y azúcar. Algunas personas le añaden huevo,<br />
pasas y demás especias. El resultado es un postre jugoso, de cierta<br />
rugosidad y una pizca de acidez.<br />
Sweet potato paste<br />
It is very typical of the national cuisine, and is made with milk, sugar,<br />
coconut and the old sweet potato or aje, which was consumed by the<br />
Tainos. Sweet potato paste is cherished for its good flavor, consistency<br />
and creamy texture.<br />
Milk curdles<br />
Chicharron de leche originated in the Dominican East, especially Higüey.<br />
It is prepared with fresh milk, sugar, cinnamon and rennet, an active<br />
substance of animal origin that causes the milk to curdle, as one part<br />
becomes solid and another part in serum. Once the milk is curdled and<br />
drained in cloth strainers, the dough gets compacted and divided into<br />
pieces to be finally cooked in syrup.<br />
Jalao<br />
This is a very simple, sweet and easy to make dessert. Its basic ingredients<br />
are grated coconut and honey. After mixing, it must be shaped<br />
into small mounds, which are then taken to the oven in a tray. The jalao<br />
usually looks dark and solid, and it is one of the sweets that shapes our<br />
gastronomic identity.<br />
Milk pastry<br />
Made with whole milk, sugar, cornstarch and salt. The solid appearance<br />
of the milk paste is provided by slow cooking in a thick bottom cauldron.<br />
Then, it’s beaten constantly once it is removed from the fire and placed<br />
on waxed paper, in a rectangular shape. It is usually filled with dehydrated<br />
fruit pulp such as guava, orange, figs.<br />
Curdled milk fudge<br />
This typical dessert delights the most exquisite palates. Although it is<br />
also prepared in other countries, the Dominicans recognize it as their<br />
own. There are several ways to prepare this dish, however, some of the<br />
basic ingredients consist of lemon and sugar. Some people add eggs,<br />
raisins and other spices. The result is a juicy dessert, with a certain rough<br />
texture and a lingering tangy finish.<br />
