EL APORTE ESPAÑOL THE SPANISH CONTRIBUTIONS Con la llegada de los españoles a la isla se produjo un encuentro de culturas que cambió la vida de los taínos y la percepción del mundo predominante hasta ese momento. Un pueblo segmentado en cinco cacicazgos y controlado cada uno por un cacique, los acoge, iniciándose un proceso de transculturación, no sólo gastronómico, sino en todos los órdenes de la vida cotidiana. Aunque la mayoría de los autores coincide en que tanto plantas como animales fueron traídos en el segundo viaje, ya desde el primer viaje los conquistadores introdujeron hábitos, costumbres, productos, plantas y animales trasladados desde España, muchos de los cuales pudieron remedar en el Caribe. En esta primera fase tuvieron que acostumbrarse a la ingesta de comestibles nativos, logrando reproducir y adaptar platos de la cocina española, formas de preparar los alimentos y de cultivar la tierra. En los años siguientes, como establece José G. Guerrero, “… los alimentos europeos se adaptaron y se intercambiaron con los de la población aborigen… Españoles e indios comieron mutuamente sus alimentos, los modificaron y crearon platos indo-hispánicos…” Este proceso de deculturación y aculturación, matizado por diversos factores históricos y sociales condicionados por la realidad colonial, contribuyó a la creación de una cultura sincrética, transmitida de diversas formas, y con modificaciones, a las presentes generaciones. The Spaniards’ arrival to the island of Santo Domingo paved the way for a cultural encounter that changed the lives of the peaceful Tainos. The Taino people were divided into five cacicazgos and each controlled by a cacique, who welcome them, initiating a process of cross cultural influence, not only gastronomic, but in all orders of daily life. From their initial arrival, the colonizers brought habits, customs, products, plants and animals from Spain which were foreign to the Tainos. Fortunately, ,most of the foods were able to be grown and reproduced in the Caribbean. Even though the Spaniards were forced to get used to eating some pre-Columbian foods from the Tainos, such as cassava bread, they were quick to reproduce dishes from Spanish cuisine as well. Likewise, they introduced new ways to prepare food, as well as new ways of harvesting crops. According to Jose G. Guerrero’s testimony, European dishes are adapted and exchanged with those of the native population. He stated “Spaniards and Indians ate each other’s food, modified it and created Indo-Hispanic dishes”. This process of deculturation and acculturation, tinted by various historical and social factors conditioned by the colonial reality, contributed to the creation of a syncretic culture, transmitted in different ways, and with modifications, to the present generations. 53
