Existe en el país un público consciente que fundamenta su nutrición en<br />
la preparación de productos de cercanía y de temporada, preferentemente<br />
agroecológicos. Además, se toma en consideración el impacto<br />
ambiental que genera la producción de los alimentos y se eligen los que<br />
dejan menor huella de carbono.<br />
Las personas que practican la gastronomía sostenible toman medidas<br />
para reducir el consumo de energía, empleando utensilios de cocina<br />
que retienen mejor el calor y electrodomésticos de bajo consumo.<br />
Dentro de la práctica de este público, se encuentra el uso eficiente del<br />
agua que implica la reducción de la cantidad destinada al consumo y su<br />
reutilización en la medida de lo posible. Asimismo, se reciclan envases,<br />
se disminuye el uso de plástico y se reducen los desperdicios, con el<br />
reaprovechamiento de algunos restos de comidas.<br />
Existe un proyecto que se ha estado desarrollando con óptimos resultados,<br />
en el sector Los Brazos de la provincia Puerto Plata en la costa<br />
norte, es la granja Taíno Organic Farm, la cual como ellos mismos la<br />
definen, es un centro educativo y de demostración de agroturismo inspirado<br />
en la permacultura que promueve alimentos sostenibles y nutritivos.<br />
El proyecto cuenta con un hotel y restaurante, los cuales abastecen<br />
y además promueven un turismo basado en este tipo de oferta<br />
gastronómica y sistemas de producción. También son utilizados por<br />
nuestras universidades para estudiar sus sistemas, ya que este es un<br />
proyecto de vanguardia en la región.<br />
Sustainable Gastronomy<br />
There is a large public whom is aware about their nutrition and the<br />
preparation of local and seasonal products. They usually prefer those<br />
agroecological products, because the environmental impact and carbon<br />
footprint generated by producing these foods is lower compared to the<br />
one by non-organic products.<br />
Furthermore, people who practice sustainable gastronomy, take all the<br />
necessary steps to reduce energy consumption, by using kitchen utensils<br />
that better retain heat as well as low-energy appliances. These individuals<br />
are also aware of the efficient use of water, and that implies the<br />
reduction of the amount destined for consumption along with its reuse.<br />
Also, containers are recycled, and the use of plastic and kitchen waste<br />
is reduced by reusing it to some degree.<br />
There is a sustainable project that has been developed with optimal<br />
results located in the area of Los Brazos in the Puerto Plata province<br />
on the north coast , it is the “Taino Organic Farm”. This farm is an educational<br />
center where agri-tourism is the main premise and is inspired<br />
by permaculture that promotes sustainable and nutritious foods. The<br />
project includes a hotel and a restaurant, which supply, and promote<br />
tourism based on this type of gastronomic offer and production systems.<br />
They are also used by our universities to study their systems, as<br />
this is a cutting-edge project in the region.
